Description
The STvega Meat Chopping machine is designed for professional separation of pre-cooked raw materials (beef, pork, poultry) into individual fibers or small pieces. The equipment is the optimal solution for the production of components for ready meals, fillings for semi-finished products (pancakes, pizza, pies), as well as for the production of meat snacks and snacks. The machine fully automates the process of meat disassembly, providing an accurate imitation of manual labor at an incomparably higher performance and stable quality of each batch.
Principle of operation:
The prepared raw materials are fed onto a loading conveyor belt, which directs them to the working area to a cascade of four rotating shafts equipped with special breaking studs (pins). The pins of adjacent shafts engage with minimal clearance, delicately dividing muscle tissue into fibers along their natural direction. This method allows you to completely imitate the process of manual disassembly of meat, preserving the juiciness and natural structure of the product as much as possible without destroying the fibers. The degree of grinding (from 1 mm to 10 mm) is regulated by synchronizing the conveyor feed speed and the intensity of rotation of the shafts through the frequency converter.
