Description
STvega Vacuum VK H series vacuum boilers are used for hydrolysis, neutralization, crystallization, evaporation and other thermal processes. The equipment is suitable for the preparation of a wide range of products: mashed potatoes, soups, side dishes, meat dishes, pâtés, sauces, jams, etc. Working under vacuum allows you to lower the boiling point of water and other liquids, so that more nutrients are retained in the products. This has a positive effect on the taste and aroma characteristics of the finished dish.
Principle of operation:
The necessary ingredients are loaded into the cooking boiler. After that, the heating process to the set temperature starts. The product is continuously stirred by a frame-type scraper mixer, which prevents burning and ensures uniform processing. The speed of rotation of the mixer is adjustable. With the help of a vacuum pump, a vacuum is created in the internal volume, which helps to remove air and excess moisture. After reaching the required consistency and readiness, the product goes through the cooling stage and is sent to the next stage of production.
Equipment advantages:
- Cooking in a vacuum takes place at a lower temperature, which allows you to preserve more useful properties and improve the taste of the finished product.
- The cooking time is reduced compared to conventional cooking boilers.
- Uniform heating around the entire perimeter of the boiler ensures stable product quality.
- The salt cotton insulation layer protects the operator from burns.
- Dual real-time temperature control: thermocouples are installed in the intermediate layer and bottom of the boiler and connected to the temperature controller.
- The mixing system is equipped with speed control.
- The discharge port is equipped with a throttle valve for precise control of product flow.
- Comfortable movement thanks to the wheelbase (two wheels with brakes and two fixed) and an ergonomic handle on the body.
